This Sweet Potato Pie was not overly sweet and very yummy with a hint of fresh ginger and mint. We just ate it after some buffalo burgers and green beans, a non-occasion winter dinner at home! Sweet potatoes are some of the most comfort-foody staples I can think of...this may have been the most basic but perfectly tasting pie of 2007.
